Almost exactly 12 months ago, the idea was to go to ATM at 622Mbps. In the space of one year, gigabit ethernet has become so viable an alternative that the tender that is outstanding currently is for gigabit ethernet (nearly $1.5M thereof :-P). Plus I would think on my ZIII SCSI-II fast controller, it would be way faster than a ZII ethernet board, as most of the Amiga ones are now. Maybe a Z3 card is what you need then. Or maybe the ethernet card needs to be a better designed 100baseT. But a scsi bus isn't designed with this kind of traffic in mind.
